Mini Skillet Chocolate Chip Cookie Recipe
5 tablespoons butter1/3 cup firmly packed light brown sugar2 tablespoons plus 2 teaspoons white sugar1 teaspoon vanilla1 large egg3/4 cup plus 2 tablespoons flour1/4 teaspoon baking soda1/8 teaspoon baking powder1/8 teaspoon salt6 tablespoons chocolate chipsPreheat the oven to 350F.

Over medium low heat, melt the butter. Remove and stir in the sugars and vanilla. Allow to cool for 5 minutes.
Add the egg and whisk until fully incorporated. Mix the flour, baking soda, powder, and salt in a small bowl. Add the flour mixture to the butter egg mixture in four batches, until very few streaks of flour remains. Fold in the chocolate chips with a spatula dont overmix!
Divide into mini skillets and press the dough down into an even layer. Bake, until golden brown, but still soft in the centre, 20-25 minutes, depending on desired doneness. Remove from the oven and enjoy warm with ice cream, if desired!
PS If you want to make the large 10 inch skillet cookie, double all of the ingredients except for the egg instead of using 2 eggs, use 1 egg and an extra egg yolk.
